Dilled Cucumbers with Wakame

1 lb. Cucumbers                                    cup fresh dill, chopped fine

1-2 strips wakame or                          brown rice vinegar, umeboshi vinegar, or lemon

1-2 tsp. shredded wakame

sea salt

Wash cucumbers and slice thin.  If waxed, peel.  Soak wakame 3-5 minutes, remove center rib, and slice.  Place sliced cucumbers in a colander and mix with 2 tsp. unrefined sea salt.  Allow to sit 20-30 minutes.  Rinse well and combine with fresh dill and brown rice vinegar, umeboshi vinegar, or lemon to taste.  Thinly sliced red onion make a nice addition.
